    Ingredients for 4 persons) :

    8 scallops without their coral
    1 orange
    10 cl of dry white wine
    1 pinch of sugar
    1 pinch of saffron threads
    Butter
    Salt pepper
    4 handfuls of lamb's lettuce
    1 bottle of  orange and honey dressing  Traversette Street

     

    Preperation :

    Start by preparing the scallop sauce. Squeeze the juice from the orange.

    Pour it into a saucepan and add the white wine. Add the sugar, salt and pepper, and bring to the boil. Let boil for 1 minute, add a pinch of saffron, lower the heat, then simmer for 5 minutes.

    Remove from the heat and set aside.

    Melt a large knob of butter in a pan. Once melted, sear the scallops for one minute on each side.

    Pour the orange sauce into the pan, bring to the boil, add the scallops, cover them well with the sauce.

    Remove from the heat and immediately serve the scallops with a little orange sauce, accompanied by a lamb's lettuce salad seasoned with orange and honey vinaigrette.
