Imported from Gaeta, Italy, to Sète by Italian immigrants in the 18th century, the tielle sétoise is a plump pie of orange and saffron color, with a serrated edge, which contains a filling generously garnished with squid and octopus, embellished with a slightly spicy tomato sauce.
Our recipe is made with French wheat flour and tomatoes from Provence.
