But where does this ashy line come from, which seems to cut the Morbier in two? You have to go back two centuries to understand the peculiarity of this cheese made from raw cow's milk . In the isolated farms of Franche-Comté , the farmers prepared a cheese in two batches. With the morning milking, they made a curd which they molded and which they covered with a thin layer of wood ash to protect it. The next morning, they added the curds from the second milking. Today, this black stripe, now traced with vegetable charcoal , remains the signature of this smooth and melting cheese, which fortunately lends itself to all culinary games. Its production terroir corresponds to the Jura massif . This uncooked, pressed cheese with pale yellow flesh is often found on a classic cheese board. The morbier wheel measures 35 cm in diameter and 5 to 8 cm thick. It obtained its AOP controlled / protected designation of origin in 2000.
