Destemmed harvest, fermentation with indigenous yeasts. The Cabernets-Sauvignons are vatted for 40 days of maceration in tapered vats punctuated by daily revitalization and 2 light shedding. Blend with Grenache and Cinsault presses from Petite Selve and Berty. Not glued and unfiltered.
